What is haze and where does it come from?

At this year’s Brewcon event, Bluestone Yeast founder Derek Lacey gave a talk on how the interaction between hops and yeast is the primary cause of haze in beer.

The presentation defines the particles in beer that constitute haze and the processes behind the formation of these particles.

It then goes on to outline an experiment Bluestone conducted to investigate the hypothesis that beer haze can be promoted in any beer wort and that it is actually a yeast and hop-specific phenomenon.
