Our Story

Fresh liquid yeast, made in Melbourne for Australian and New Zealand brewers.

Founded in Melbourne in February 2018 by Dr Derek Lacey, Bluestone Yeast was built to solve a simple problem: every liquid yeast culture used in Australian breweries was imported, with weeks of transit and no cold chain control.

Derek brought 20 years of cell culture and fermentation science from medical research into brewing. First commercial shipments went out in early 2019. Today, Bluestone works with breweries and distilleries across Australia and New Zealand.

In 2025, the range expanded with cold-side Nutrient Boosters (Zinc, Vitamin, High Gravity) and the Clean Repitch System for serial yeast harvesting.

The Science

The Bluestone biobank holds 150+ strains at -80C, each preserved in its original state for on-demand propagation. Research partnership with the University of Melbourne keeps product development grounded in current science.

Dedicated lab and production at 172 Perry St, Fairfield. Biobank, propagation, QC, and fulfilment all on site.
