Dark Rum

Intense banana and dark fruit esters with clove phenolics. The highest congener load in the range. Produces a rich, tropical new make suited to rum production. May need careful still cuts to balance the very high flavour intensity.

POF Positive. This blend produces phenolic flavour compounds (4-vinylguaiacol and related). This is intentional for the target spirit style. Requires dedicated fermentation vessels or thorough cleaning protocols between batches to prevent cross-contamination with non-phenolic fermentations.
