Clove and pepper phenolics layered with moderate fruit esters. Two distinct phenolic strains contribute different spice characters. Maximum phenolic complexity in the range. Niche but highly distinctive for distillers wanting yeast-derived spice.

STA1 Positive. STA1 positive. For distilling use, this is an advantage: more complete attenuation means more ethanol and a drier wash.
POF Positive. This blend produces phenolic flavour compounds (4-vinylguaiacol and related). This is intentional for the target spirit style. Requires dedicated fermentation vessels or thorough cleaning protocols between batches to prevent cross-contamination with non-phenolic fermentations.
