Bruges is a classic Abbey-style strain well suited to a wide range of Belgian ales, from tripels and dubbels to strong dark ales. It produces rich fruity esters of plum, cherry, and banana that develop into more earthy, complex notes at lower fermentation temperatures (18-19C). High alcohol tolerance of 12% makes it a strong choice for high-gravity Belgian specialties. Medium-low flocculation means it is slow to clear, so filtration or extended cold conditioning may be required for bright beers.
