Wallonia is a complex farmhouse strain named after the French-speaking region of Belgium where the saison style originated. It delivers high ester levels and juicy aromas with prominent spicy, peppery phenolics that define the classic saison character. The earthy, fruity complexity complements complex malts and works beautifully with spice additions. Ferment warm (24-29C) for maximum expression, but note that it can stall if temperatures drop below 21C during active fermentation.
