Belgian Saison
Brussels is a phenomenal wort attenuator that produces very dry, crisp beers with bright citrus aromas and a peppery, spicy saison character. Its high attenuation (77-83%) and low flocculation create the classic bone-dry saison profile, but it requires filtration for bright beers. STA1 POSITIVE (diastatic): this strain will continue to consume residual sugars over time, so it must not be used in blending or shared equipment without proper STA1 risk assessment. Excellent for saisons, farmhouse ales, and Belgian specialties where extreme dryness is desired.

Distilling use
Brussels can also be used for Gin botanical wash, peppery spirit. For spirit production, confirm the wash, temperature plan, and nutrient approach before ordering.
