German Kolsch
Cologne is a clean, crisp German Kolsch strain with a very low ester profile that produces lager-like character at ale fermentation temperatures. It accentuates hop flavours and delivers a delicate, refined finish ideal for kolsch, altbier, and other light-coloured beers. Better flocculation than most kolsch strains allows brewers to produce bright beers more quickly. Ferment at the cooler end (13-16C) for the cleanest profile. Some sulfur may develop during fermentation but dissipates with conditioning.
