Edinburgh is a malt-focused Scottish ale strain that delivers rich, full-bodied beers with low ester production and high flocculation. It drops fast and clear, leaving a malty sweetness and depth of complexity that defines Scottish and strong ales. Lower attenuation (69-73%) preserves residual body and sweetness, making it particularly well suited to malt-driven styles. Broad temperature tolerance (13-22C) means it can be fermented cooler for exceptionally clean results. An excellent choice for barleywines, wee heavies, and any style where malt character should dominate.

Distilling use
