San Diego is a clean, neutral American ale strain that lets hops and malt character shine without yeast-derived interference. Very low ester production and high neutrality make it the go-to workhorse for West Coast IPAs, pale ales, and any style where ingredient-forward character is the goal. It can be fermented cool (14-16C) for exceptionally crisp results approaching lager-like cleanliness. Medium-high flocculation aids clarity, though filtration or fining may still be needed for crystal clear beers.

Distilling use
