Melbourne is a uniquely Australian ale strain producing very clean, crisp flavours with low fruitiness and mild ester production. Its neutral character makes it an excellent versatile house yeast where dominant malt and hop character are desired. Mild citrus notes develop with cooler fermentations (15-19C), adding subtle complexity. Medium-high flocculation aids clarity, though filtration is normally required for completely bright beers. An ideal choice for brewers wanting a clean canvas that still has a touch more personality than pure American strains.
