Hampshire is a distinctive English ale strain known for its full body, fruity complexity, and very high flocculation. Lower attenuation (68-72%) leaves significant residual sweetness, producing rich, malty ales with character. It can produce diacetyl, so a warm rest at the end of fermentation is recommended. The extremely flocculant nature means it can drop prematurely before finishing, so monitoring gravity towards the end of fermentation is advised. Best suited to traditional English bitters, ESBs, and malt-forward styles where full body is desired.
