Belgian Saison
Charleroi is a spicy, earthy saison strain that excels when allowed to free-rise during fermentation, achieving complete attenuation for a bone-dry finish. Very high attenuation (78-85%) creates the classic saison dryness. For high-gravity saisons, using a different yeast to finish after 50-60% fermentation is suggested. STA1 POSITIVE (diastatic): do not use in brewing blends without STA1 risk assessment. Well suited to saisons, Belgian ales, and witbier.
