Mons is a Belgian farmhouse strain producing notes of clove and delicate fruit esters along with moderate phenolics. It delivers the classic saison character with very high attenuation (78-85%) creating a dry, refreshing finish. Earthier and more complex than Brussels (BSY-A005), Mons adds depth to Belgian farmhouse ales, saisons, and witbier. Ferment warm (20-28C) for maximum expression of its spicy, fruity character. Low-medium flocculation means extended conditioning or filtration for bright beers.
