Looking Back and Looking Ahead: Craft Beer Trends for 2025

As we step into 2025, it’s a great time to reflect on where the craft beer world is headed and how last year’s predictions held up. In 2024, we anticipated the continued rise of craft lagers, a focus on local brewery events, and the potential growth of craft non-alcoholic beers and seltzers. So, how did it all pan out?

First up, craft lagers. We’ve definitely seen more breweries embracing lagers and putting effort into making high-quality versions of this classic style. Many of our customers have used Bluestone Yeast’s lager strains to create exceptional lagers that have won awards across the country. While we’d love to see even more craft lagers on the market, we’re calling this prediction a win!

Next, local community engagement. Breweries have been leaning into their local roots, hosting events and participating in smaller beer festivals. Take the IPA Cup run by Range Brewing in Brisbane—it’s a fantastic example of this trend. Another win in our books!

However, craft non-alcoholic beers and seltzers didn’t gain the traction we expected. While products like Hard Solo (later rebranded to Hard Rated) made a splash, craft breweries struggled to make significant inroads in this space. Big players like CUB/Asahi have dominated, pouring substantial marketing budgets into this category. If craft breweries want to compete here, they’ll need to innovate. Our prediction? Those who develop adult flavors that cater to niche audiences will have the best chance of carving out a foothold.

One thing we didn’t foresee in 2024 was the rapid rise in costs for both brewers and consumers. This financial strain has put many of our customers under pressure. Unfortunately, we expect these challenges to persist in 2025, though there may be some relief as the year progresses.

What’s Next for 2025?

Gone are the days when a clever can design was enough to get your beer flying off the shelves. In 2025, unique taproom experiences will be key to engaging customers—and this is where craft breweries have the upper hand. A great example is Wildflower’s bold move to introduce a Kölsch service. It’s innovative, risky, and exactly the kind of creativity the industry needs. If you get a chance to visit, let us know how it’s going!

We also predict collaborations will hit new heights. Whether it’s co-branded beers, shared events, or collaborative festivals, the spirit of “stronger together” will drive success. When times are tough, doubling down on community and partnerships can make all the difference.

Exploring Lager Yeast in Hoppy Beers

Lager-style beers are having a major moment. Whether it’s Cold IPAs, rebranded NZ Pilsners, or West Coast Lagers, brewers are leaning into the clean, crisp character that lager yeast brings to the table. These strains not only deliver that refreshing finish but also produce higher levels of SO₂, which act as natural antioxidants to keep beer fresher for longer.

As IPAs continue to evolve, one trend for 2025 is all about keeping it cool—literally. Cold IPAs rebranded as West coast lagers are taking centre stage by using lager yeast to create a unique hybrid style. With the crispness of a lager and the bold hop-forward punch of an IPA, they’re quickly becoming a favorite among brewers and drinkers alike.

Lager yeast in hoppy beers is still relatively untapped, but it offers some big advantages:

  • It naturally produces more SO₂, which helps preserve freshness and stabilize flavor.

More brewers are beginning to explore these benefits, and 2025 could be a breakout year for experimenting with lager and Kölsch yeasts. From refining the Cold IPA to creating entirely new styles, there’s a lot of exciting ground to cover.

A Curveball Prediction

Here’s a wild card to watch: the rise of weight-loss drugs like Ozempic. These GLP-1 drugs, which are gaining popularity, are shown to reduce alcohol consumption, particularly in heavy drinkers. If the movement toward drinking less gains momentum, craft breweries are uniquely positioned to thrive. Craft beer has always been about quality over quantity. If consumers are opting for just one or two beers, they’ll want the best-tasting option—and that’s always going to be craft.

Finally, given the meteoric rise of Guinness in the last year and the flow on to similar style dry stouts in the UK and Europe we predict that 2025 will be the year of the Dry Irish Stout! I hope so, as this is a beer style I love.
